Right then—let's make some macarons, shall we? Is everything in order, Jack?

Fired up 'n ready to go!

The first step is to make the meringue. You'll need to whip the egg white while it's still cold to ensure nice, stable peaks, so work quickly.

Gotcha. I can use the shell to separate the white from the yolk, yeah? Seen that one TV before.

That's one method, yes. But just to be safe, today I'd like you to crack the egg into a bowl and extract the yolk with a ladle.
The peaks of your meringue won't form if any of the fat from the yolk gets in, so be sure not to break them.

High-stakes stuff. Gotta work fast, but careful.
*knock, crack*

Nice, got a clean break. Now to use this ladle to scoop out the yolk...

*clink, scoop*

Th-that's quite a look. He must be really focusing. I'd best not break his concentration.

Phew... Okay, egg yolks intact. Time to whip up the egg whites.

Remember, if you don't achieve firm peaks, the batter won't rise properly as it bakes.

Oof, and then the macarons won't have that nice, puffy look. Guess this is an important step.

Indeed it is! Now go on and beat the egg whites. You'll need to add a good amount of granulated sugar as you go, too.
*whisk*

...Peaks are standin' pretty well. How 'bout it, Chef? Is the meringue stiff enough yet?

For making macarons, that's just about perfect. You're ready to move on to the macaronage stage.

Macaronage? Gotta be the first time I've ever heard that word...

Simply put, you mix in sifted almond flour and sugar while working the air out of the meringue.

Hold on—I went to all the trouble of making a nice fluffy meringue, and now I'm gonna squash it? Baking makes no sense...

Well, we WOULD leave it as-is if we were aiming to make something light and airy, such as a sponge cake.

Ah, so it depends on the recipe.

Even in this case, you don't want to COMPLETELY flatten the meringue. Start by adding a third of the dry ingredients.

Let's see, to flatten it I'd better press it against the bowl while I mix.
*whisking*

Gotta apply the right amount of force, too... Man, this is hard. But the meringue is definitely starting to loosen up.

Fine work there, Jack. Add the rest of the flour and sugar, and keep working the batter until it slides off the whisk like a ribbon.

Got it. Gotta be careful... Don't wanna overwork it on accident...
*mixing*

I tried lifting my whisk, but the batter's just dripping off it in clumps. Guess I still need to mix it more...
Little more... But not TOO much more...

There's that scary look again... Jack gets so intense when he's concentrating.

...Phew, finally done piping out the batter. I think they're all about the same size?
Gotta let the batter dry now, right Chef?

That's right. You were really focused there for a bit; I hope you're not too tired.

Nah, not me. Got a lotta stamina built up from all my training.

Great, the white chocolate ganache is done. Just need to wait for the batter to finish baking.

Jack, I know you said you wanted to undertake the Crucible in order to make meals that would help with your training...
So I suppose you must be a little disappointed you ended up baking sweets.

Honestly, yeah.
But it was my choice to sign up all the same, so there's no way I'm gonna phone it in.
Besides, I bet making sweets can still teach me a lot of useful stuff 'bout cooking.
Never hurts to learn somethin' new. And while I'm here I may as well give it my all.

I can tell just from that attitude how seriously you're taking this, Jack!
You know, we have a little time... Why don't I show you a few recipes for some sweet protein-filled treats?

You mean it? That'd be great!
*multiple beeps*

Okay, the macarons are done baking. Hope they turned out okay...
*clink*

The heck? They're all cracked and crumbly! Where'd I go wrong?

Hard to say. Perhaps the meringue wasn't whipped enough, or the macaronage went wonky. The batter might also have been left out to dry too long...
The strength of one's oven, or how long you let it pre-heat, can have an effect as well.

So it could be ANY of those?!

Macarons are exceedingly difficult to make. They require a lot of practice to perfect.

Gotta learn from my mistakes, huh? Guess I'll try and do better next time.

That's the spirit! But first things first, let's finish up enough to fill the order.

Right. Hm, these are too big. Musta squeezed the piping bag a bit too hard... And these are just plain weird-looking.
Guess I can use these...and maybe these?
Okay, I'll squeeze the white chocolate ganache onto this one here...
*squeeze*

And then sandwich it with the other one...

Dude, what? It's YOU makin' my macarons, Jack?!

Ugh, usually it's a good thing to draw an Ace, but no so much here.

Man, I can't even PICTURE that. What a riot.

Yeah, yeah, laugh it up. Here's your macarons. Get 'em down ya.
*plate clink*
Whoa! They're all cracked and fallin' apart! You call these macarons?!
I knew I wanted them the moment I saw them on the menu, but now I feel like maybe I should've ordered something else...
Gah... Don't like hearin' it, but I can't deny they don't look great...
I GUESS I'l eat 'em since they're here... Oh, actually one of them does look pretty good.
Most of them completely fell apart. I tried to pick the best ones to serve ya.

Huh, okay. Guess I'll start with the decent-looking one.
*chomp* *chomp* Hey... It's actually not bad!

Yeah, yeah... Wait, what'd you say?

Nice and flaky, and the cream in the middle goes down real smooth... This is a legit macaron!
Sounds like you had to sacrifice a lot of its siblings to get there, but yeah. This one's on the right track!

Don't much like all the jabs you threw in, but I guess I pass.
